Ingredients

  • 1 lb ground beef
  • 1⁄2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 (20 ounce) can enchilada sauce
  • 8 flour tortillas

Directions

  1. Brown meat and onions in large skillet.
  2. Add 1 cup enchilada sauce and 1 cup cheese.
  3. Mix well.
  4. Put filling along centre of each tortilla.
  5. Roll up and place seam side down in a 9×13 pan.
  6. Pour remaining sauce over.
  7. Sprinkle remaining cheese over.
  8. Bake at 350F degrees for about 30 minutes till cheese is bubbly.

The final result was 2 pans full of yummy ground beef enchiladas. There are 4 very big enchiladas in both baking dishes. I covered one of them securely with foil and placed it in the deep freeze. It will be easy to reheat for a quick dinner at a later date.
