  • 2 tablespoons fresh minced chives OR 1 tablespoon dried chives
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons dijon mustard
  • Juice of 1/2 lemon (about 2 tablespoons)
  • 1/4 cup—1/2 cup buttermilk

  2. Refrigerate and let flavors blend for at least 30 minutes, preferably 2 hours, before serving.

Fresh or dried tarragon is good, such as basil, rosemary, or coriander. The vinegar also works well and you can try vinegar, lemon or herb vinegar. Rice vinegar, barley and vinegar also work. Add some olive oil, salt and black pepper and mix everything. Add more vinegar, oil or water until you have good consistency. You can also add thyme and sumac berries, basil, or whatever you like.
